THE LEGACY
Founded in 2009 by Eddie Lakin, Edzo's Burger Shop quickly became an Evanston institution. Using fresh, never-frozen beef ground in-house daily, hand-cut fries, and hand-spun milkshakes, Edzo's earned a reputation for quality that attracted locals and food enthusiasts from across Chicago.
For over a decade, Edzo's served as both a neighborhood staple and a destination for burger aficionados seeking the perfect balance of classic technique and creative flavors.
THE REVIVAL
About
Edzo's, Eddie's love letter to Chicago street food, enjoyed a 15-year run in downtown Evanston before the post-Covid work-from-home trend continued. Edzo's closure in late 2024 caused an outcry among longtime regulars with many offering to help bring the concept back to life.
The two other principals of the group, both longtime regular customers, were inspired to revive the concept and brand, which still enjoys great PR and brand recognition in the area, and take it to the next level.
